Dry Ingredients
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
Wet Ingredients
2 large very ripe bananas, mashed with fork
1/2 cup applesauce
1/4 cup sugar, maple syrup or agave syrup
1 Tablespoon ground flaxseed meal
1/2 cup chocolate chips
1/2 cup chopped walnuts
2 teaspoons vanilla
2 teaspoons lemon juice
1 cup plant milk
In a large bowl, stir together first four (dry) ingredients. In a medium bowl, stir together remaining (wet) ingredients. Pour wet ingredients into the large bowl and gently mix with the dry ingredients.
Pour batter into a parchment-lined loaf pan. Bake at 350F degrees for 60-70 minutes, or until a toothpick inserted near center of bread comes out clean. Allow to cool before icing or slicing.

Optional Frosting - blend together
3/4 cup dates
3/4 cup walnuts
1 cup water
1 teaspoon vanilla

Optional Icing - stir together
1 cup powdered sugar
1 to 2 Tablespoons water or plant milk
1/2 teaspoon vanilla

Optional Chocolate Sauce
1 cup water
1/4 cup + 2 Tablespoons sugar, maple syrup or agave
1/4 cup cocoa powder
2 teaspoons cornstarch
2 teaspoons vanilla
In a saucepan cook and stir over medium heat until thickened.
