1/2 cup low-sodium soy sauce
1/2 cup water
2 Tablespoons peanut butter
2 Tablespoons apple cider vinegar
1 Tablespoon maple syrup
4 to 5 cloves garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper
Stir together all ingredients in a saucepan and simmer gently for two minutes. Store in a small bowl or jar in the refrigerator.

For a lower-sodium, higher-fat version of peanut sauce:
1/2 cup peanut butter
1/2 cup water
2 Tablespoons soy sauce
2 Tablespoons apple cider vinegar
2 or 3 Tablespoons maple syrup or sugar
2 cloves garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper
