Corn-Based Thousand Island Dressing
1 cup frozen corn, thawed
1 cup water
1 tomato
1 stalk of celery, diced
1/2 cup diced onion
3 small dates
1/4 cup walnuts
3 tablespoons ketchup
1 teaspoon soy sauce
1 Tablespoon lemon juice
1 Tablespoon fresh parsley (optional)
2 Tablespoons dill pickle relish
Blend all ingredients except the relish until smooth. Stir in relish. Refrigerate for up to a week.

Tofu-based Thousand Island Dressing: Substitute one pound of silken tofu for the corn, celery and walnuts.
