Blueberry Cobbler


Ingredients

2/3 cup whole wheat pastry flour
1 1/2 teaspoons baking powder
1 Tablespoon vanilla
2/3 cup milk substitute (soy, rice, almond)
3 Tablespoons agave nectar or maple syrup
2 cups blueberries

Instructions

Preheat oven to 350 degrees.

Combine flour and baking powder in a small bowl.

Combine vanilla, milk and sweetener in a measuring cup.

Add contents of the measuring cup to the dry ingredients and mix until smooth. The batter will be runny.

Pour into a nonstick 8" square pan. Sprinkle the blueberries over the batter. Bake for 45 minutes or until browned.

Notes:  I used frozen blueberries and baked the cobbler in an ungreased glass dish.
